Veganzola, pear and maple roasted walnut salad

Coming into the summer, this is a great light dish that explodes with flavour. Pear and Blue cheese has always been a fantastic pairing and introducing the maple roasted walnuts gives it extra sweetness that is balanced off perfectly by the rocket and balsamic vinegar.

Preparation time: 25 mins


  • 100g Veganzola

  • 8 Figs

  • 1 Pear

  • 100g Walnuts

  • Maple syrup 


  1. Pre-heat oven to 180 degrees

  2. Place the walnuts on baking paper and drizzle with maple syrup, turn the walnuts over and repeat to ensure they are fully covered

  3. Put the walnuts  (on the baking paper) into the oven for 10-12 minutes until golden

  4. Whilst the Walnuts are roasting, mix the rocket, spinach and watercress

  5. Quarter the figs and slice pears as desired, add these to the leaves

  6. Crumble or slice the veganzola and add to the salad, then add the roasted walnuts once cooled to room temperature

  7. Finish with a mixture of olive oil and balsamic vinegar.
