Vegan Caesar Salad

Gone are the days of the ordinary Caesar!

In our plant-based take, the creamy texture and rich flavours of our Garlic & Herb add an extra depth that pairs superbly with the fresh greens and zesty dressing.

Ingredients

2 large handfuls of lettuce

A large handful of croutons

1 avocado, diced

75g Garlic & Herb

Pre-cooked VG chicken &/or bacon

Dressing:

1 garlic clove, minced

2 tbsp nutritional yeast

60g VG mayo

1 tbsp white wine vinegar

Juice of ½ lemon

A tsp of capers, chopped finely

Salt and pepper to taste

Vegan Caesar

Method

Add all the dressing ingredients to a jar and mix well until smooth. Add your lettuce to a large serving bowl, and then add the vegan chicken or bacon, croutons, diced avocado and crumbled cheese. Toss to combine.

Pour on the dressing to your salad a little at a time, and keep mixing together until you’ve got the right ratio of salad to dressing. Add any other toppings you might like and serve.
